Jeera Rice with cashew-nuts
Its north-Indian dish and very simple recipe.
Ingredients
Long grained Rice 1 cupWater (warm) 2 cups
Cumin seeds (Jeera) 1 tbsp
Cashew-nuts 1 handful (optional)
Ghee 2 tbs
Garam Masala- 2 bay leaves, 1’’ inch cinnamon, 4 green cardamom
Salt & Sugar as per taste
Method
1. Wash rice thoroughly and soak in water for half an hour. Then drain it and keep aside.
2. Heat ghee in a pan. Add cashew n fry till light brown. And remove from ghee.
3. Then add some more ghee add cumin seeds, bay leaf, cardamom and cinnamon.When cumin seeds crackle, add the rice. Then add salt & sugar to your taste. And add cashew.
4. Stir till ghee coats every grain of rice and it looks glossy. Add two cups of water. Bring to a boil. Stir once. Reduce heat to minimum and cover the pan with a lid. Leave a little gap, otherwise water will boil over.
5. Rice will be done when holes appear on the surface and water has been completely absorbed. Fork the rice out onto a serving dish. This will separate each grain. Serve hot with any curry. Enjoy!!!
