Paneer Tikka
'Paneer Tikka' is an Indian dish made from chunks of paneer marinated in spices and grilled in a tandoor. It is a vegetarian alternative to chicken tikka and other meat dishes.
Ingredients
Paneer 500 gms - cut into cubes
Green, Red, Orange & Yellow capsicum 1/2 - cut into cubes
Button Mushrooms 200 gms - cut into halves
Onion 1 - cut into cubes
Marinate
Curd 1 cup
Ginger paste 1 tsp
Garlic paste 1 tsp
Turmeric powder (Haldi) 1/4
Red chili powder 1 tsp
Coriander powder (Dhaniya Powder) 1 tbsp
Cumin powder (Jeera Powder) 1 tsp
Dry Mango Powder (Amchur Powder) 1/2 tsp
Garam Masala Powder 1/2-1 tsp
Tandoori Masala Powder (optional) 1 tsp
Fenugreek Leaves (kasoori methi)1/2 tsp, Crushed
Lemon Juice 1 tbsp
Mustard Oil (Sarsoo Tel) 1 tbsp
Salt & Pepper to taste

Method
1. In a bowl, take this hung curd and to it add all the ingredients listed under marinate to make a smooth paste.
2. Divide this marinate into two bowls. One for paneer & other for veggies. This helps to avoid the paneer from crumbling when we mix.
3. Mix well so that the veggies and paneer have a good coating of the marinate. Cover and let this marinate for 2-3 hrs. More the better.
4. Dip the bamboo skewers in ice cold water for about 1 hr. This prevents them from burning.
5. Cover baking tray with aluminium foil.Then grease oil/butter into it.
6. Preheat the oven to 375 F.
7. Take 1 skewer at a time and start arranging the veggies & paneer. Start with green capsicum, followed with paneer then orange capsicum, onion, mushroom, red & yellow capsicum.
8. Repeat this till you reach the end of skewer. Continue this process for the remaining skewers and line them in a baking tray.
9. Place the baking tray in the oven and bake for about 15-20 mins.
10. Change the sides in between and baste the tikka with butter/oil intermittently to prevent it from turning hard.
11. Sprinkle chat masala & enjoy it with green chutney.
