Punjabi Cholle Masala

Punjabi Cholle Masala


Cholle or (chana) masala is a popular vegetarian dish throughout Northern India. It has a spicy and slightly tangy flavor.This goes great with bhatura, naan, puri or rice.

Ingredients
White Chick Peas (Kabuli Chana) 1 cup, soaked overnight    
Onion 1, finely chopped
Tomato 1, Finely chopped
Ginger paste 1 tbsp
Garlic paste 1 tbsp
Coriander Powder (Dhaniya Powder) 1 tsp
Cumin Powder (Jeera Powder) 1 tsp
Turmeric Powder (Haldi) 1/4 tsp
Red Chili powder 1 1/2 tsp
Chana Masala Powder 2 tbsp
Dried Fenugreek (Kasoori Methi) leaves 2 tbs
Dry Mango powder (Anardana Powder) 1 tsp
Salt as per taste
Sugar 1/4 tsp
Tea bags 2/Tea leaves, tied in a muslin cloth (optional)
Ghee 3 tbsp

For garnishing
Coriander leaves, finely chopped
Onion. slices
Lemon wedges

Method
1. Pressure cook the Kabuli chana with the tea bag for 3 whistles until they are soft. Drain and keep aside. Discard the tea bag.
                        
2. Heat the 2 tbsp ghee in a pan, add the bay leaves. Then add chopped onion, ginger and garlic paste and sauté till the onion is golden brown.
3. Then add chopped tomatoes and sauté for 2-3 mins.
4. Add dhaniya powder, jeera powder, red chilli powder, haldi, salt & sugar. Stir well for a few mins until this mixture turns dark and fragrant (let it cook together for about 3 - 4 mins). 
5. Then add cooked kabuli chana. Mix well and simmer for 10-15 mins untill gravy thickens.
6. In meanwhile in another pan heat 1 tbsp ghee add kasoori methi and chana masala. Stir it for 1 min.
7. Then add fried chana masala & kasoori methi mixture to the Chole.
8. Add anardana powder and mix well.
9. Garnish chole with coriander leaves, sliced onion and lemon wedges. Serve this with bhatura, naan, puri or chapati.
