Masala Cheese Sandwich

Masala Cheese Sandwich


For quick tasty breakfast I make this sandwich.

Ingredients
Bread 4
Potato (Big) 1, Boiled & Mashed
Corn 1/4 cup, Boiled
Tomato (medium) 1, Sliced
Onion (small) 1, Sliced
Butter 1 tbsp
Cumin Seeds (Jeera) 1 tsp
Turmeric Powder (Haldi) 1/2 tsp
Ginger Paste 1/2 tbsp
Garlic Paste 1/2 tbsp
Green Chili 1, Chopped
Chat Masala 2 tsp
Salt to taste
Fresh Coriander leaves - Chopped as required
Cottage Cheese (Paneer) Grated as required
Sesame Seeds 1 tsp

Method
1. Heat butter add cumin seeds. When it sputter add turmeric powder, onion & tomato slices. Fry for 2-3 minutes.
2. Add mashed potato, corn, chopped green chili, ginger-garlic paste, salt & chat masala. Cook for a minute.
3. Finally, add the chopped coriander leaves. Keep aside.

4. Heat tava add butter. Toast both sides of the bread.

5. Spread potato-corn mixture, grated cottage cheese & sprinkle sesame seeds.
                                         
6. Again put butter on tawa and place the stuffed bread. Then place the other slice of bread at its top.

7. Press well to stick together.

8. Cut diagonally and serve with ketchup.

9. Enjoy!!!

Palak Rajma

Palak Rajma

Kidney beans prepared with spinach. Its is very healthy & nutritious recipe.

Ingredients
Spinach puree (Palak Puree) 2 cups
Boiled Kidney Beans with its water ( Boiled Rajma) 1 cup
Onion (medium) 1
Tomato (medium) 1
Green Chili 1
Ginger Paste 1 tbsp
Garlic Paste 1 tbsp
Asafoetida (Hing) a pinch
Cumin Seeds 1 tsp
Turmeric Powder 1/2 tsp
Red Chili Powder 1/2 tsp
Pepper Powder ( Crushed) 1/2 tsp
Garam Masala Powder 1 tsp
Salt to taste 
Oil 3-4 tbsp

Method
1. Make a paste of onion, tomato & green chili.
2. Heat oil in a deep pan. Add cumin seeds & asafoetida.

3. When they splutter add onion-tomato paste, ginger-garlic paste. Saute for 3-4 minutes.

4. Add turmeric powder, spinach puree & boiled rajma with water. Mix well.
5. Now add red chili powder, pepper powder, garam masala powder & salt. Mix well.

6. Cover & cook for 3-4 minutes in medium heat.
7. The healthy Palak Rajma is ready to serve.
8. Serve Palak Rajma with rice, chapatis, naan or parathas.

Pizza Bun

Pizza Bun


Ingredients
All Purpose Flour 2 cups
Active Dry Yeast 1 1/2 tsp
Sugar 1 tsp
Salt 1/2 tsp
Olive Oil 3 tbsp
Mozzarella Cheese (as required)
Capsicum (Medium) 1
Green Peas 1/4 cup
Sweet Corn (boiled) 1/4 cup
Pizza Sauce 3 tbsp
Oregano 1 tsp

Method
1. Mix flour, yeast (no need to activate it), sugar, salt & 1 tbsp oil. Knead a dough with lukewarm water. Dough will be sticky in hand so add more 1 tbsp oil and knead it well for 4-5 minutes. Make a soft dough. Cover & keep aside for 2 hours.

2. After 2 hours  dough will be just double & fluffy.

3. Preheat the oven for 390 F.
4. Grease the baking tray with some butter/ oil.
5. Meanwhile chop capsicum, grate mozzarella cheese.





6. Heat oil in a pan add all the vegetables, salt, pepper & oregano. Cook till vegetables becomes tender.

7. Now add pizza sauce and mix well.

8. Turn off the heat and keep the stuffing aside.
9. Slightly spread the flour on the palms and punch the dough.
10. Now spread little flour on palms  & roll lemon sized balls.
11. Lightly press the middle of the dough and place the stuffing, add 1 tsp mozzarella cheese and bring the sides together at center to seal the edges. Properly close the dough balls.

12. Likewise make all the balls and keep in baking tray.
13. Keep the dough balls in a distance so that it gets enough space to expand.
14. Cover and let rise for 30 minutes.

15. After 30 minutes balls will become fluffy. Now brush buns with cream or butter and sprinkle some sesame seeds over it.

16. Now bake for 12-14 minutes, or until golden brown.

17. Pizza buns are finally ready.

Chicken Chowmein

Chicken Chow Mein


There are lots of Chow mein recipes out there, but this is how I like to make it.

Ingredients
Chow Mein Noodles 8 oz
Boneless Chicken Breast 1/2 piece, sliced
Egg 2, Scrambled
Carrot 1, sliced
French Beans 6-7, sliced
Cabbage 1/2, sliced
Peas 1/3 cup
Sweet corn (boiled) 1/3 cup
Green Onion 1-2, sliced
Capsicum (Green/Red/Yellow) Any 1, sliced
Spinach Leaves 6-7
Green Chili (Slit) 2
Garlic 2, chopped
Soy Sauce 2 tbsp
Chili Sauce 1/2 tbsp
Tomato Sauce 1 tbsp
Ajinomoto 1/4 tsp
Salt 1/2 tsp
Sesame Oil/ Olive Oil 2-3 tbsp

Method
1. Boil the noodles according to the package instructions. Keep aside.

2. We need -

3. Heat 1 tbsp oil in a pan. Fry the sliced chicken. Keep aside.
4. Add some oil and add green chili & chopped garlic. Saute it.
5. Now remove the green chili and add sliced onions. Saute till onions turns pink in color.

6. Now add the all vegetables except spinach leaves. Add salt & ajinomoto.

7. When the vegetables fried add fried chicken & scrambled egg. Saute for 1-2 minutes.

8. Now add the sauces - soy sauce, chili sauce, vinegar, tomato ketchup & spinach leaves. Mix all and fry for 2-3 minutes.

9. Now add the boiled noodles. Mix well with the sauces & vegetables. Cook for 2-3 minutes.
10. Chowmein is ready to serve. Enjoy!!!

Bread Halwa

Bread Halwa


Ingredients
Bread Halwa 10 slices
Milk 3 cups
Sugar 1/2 cup
Cardamom Powder 1/2 tsp
Cashew nuts 10-15, Crushed
Raisins 10
Walnuts 10-15
Ghee 2 tbsp
Dry Fruits (For Garnishing) Cashew nuts (fried), Walnuts (fried), Almonds (chopped),
                                           Pistachio (chopped) & Raisins

Method
1. Cut bread into small pieces.

2. Heat ghee and add cashew nuts & walnuts. Fry these till it turns golden brown. Remove from ghee & keep aside.

3. In same ghee add the bread pieces and fry till it turns golden color. Drain on absorbent paper & keep aside.

4. In another pan add milk & add cardamom powder.
5. When milk started boiling add the fried bread slices.

6. Cook on a low heat till the bread pieces become soft & mushy.
7. Now add fried cashew nuts, fried walnuts & raisins. Mix well.
8. Delicious halwa is ready. Garnish with dry fruits.

9. Serve warm or cold. Enjoy***


Bread Upma

Bread Upma


Ingredients
Bread 6 slices
Carrot 1/2, Chopped
Capsicum 1/2, Chopped
Beans 6-7, chopped
Green Mango (Kairi) 1/2, Chopped
Cashew Nuts 10-12, Broken
Onion (small) 1, Chopped
Garlic 1-2, Chopped
Curry Leaves 6-7
Mustard Seeds 1/4 tsp
Urad Dal (Washed) 1 tsp
Asafoetida a pinch
Lemon Juice 2 tsp
Salt to taste
Ghee 2 tbsp
Fresh Coriander Leaves, Chopped (To garnish)

Method
1. We need -

2. Break bread into smaller pieces.

3. Heat ghee in a pan. Add cashew nuts and fry till it turns brown. Keep aside.
4. In same ghee add mustard seeds, urad dal, asafotida, curry leaves. When they pop add chopped garlic. Saute it for few minutes.

5. Now add chopped onion. When onion turns translucent add the chopped vegetables & salt.

6. Cook for 5 minutes and then add the bread. Mix well.

7. Sprinkle some water. Now cover & cook for another 2 minutes.
8. When cooked add lemon juice.
9. Transfer in a serving plate and garnish with chopped coriander leaves.
