Palak-Cheese Parcels (Spinach-Cheese Parcels

Supper yummy palak & cheese parcels....

Ingredients
Spinach Leaves 1 bunch, chopped
Mozzarella Cheese 1/4 cup
Refined Flour 2 1/2 cup
Garlic Cloves 2, Finely Chopped
Onion 1 (medium), Finely Chopped
Black Pepper Powder 1 tsp
Lemon Juice 2-3 tbsp
Salt to taste
Raisins 1 tbsp
Cashew nuts 1 tbsp, Chopped
Olive Oil 1/3 cup
Milk wash as required
Oil Spray

Method
1. Preheat oven at  350 F. Place aluminium foil in a baking tray.
2. Now combine refined flour, olive oil & salt in bowl. Add water and knead a semi soft-dough. Set aside.
3. Clean wash and finely chop spinach leaves.
 

4. In a non stick pan heat 1 tbsp olive oil. Add chopped garlic and saute for a while.
5. Now add chopped onion mix and saute till onion is lightly browned.
6. Add pepper powder & salt. Mix well add spinach, toss and cook it.
7. Now add raisins and chopped cashew nuts and cook for a 2-3 minutes.
8. Add lemon juice and mix well and cook for a minute.
9. Transfer the cooked spinach mixture on a plate and let it cool.
10. Now add grated mozzarella cheese and mix well.
11. Dust the dough with the little flour and roll out into a large thin sheet. Cut round disc using a medium-sized cookie cutter.


12. Apply water on the edges of discs. Place a spoonful of spinach mixture in the center, bring in the edges, pinch and make into parcels sealing the edges.
 



13. Now spray some oil in baking tray and place parcels it, brush with little milk and put in preheated oven. Bake for 15-20 mins.


14. Remove from heat and place parcels on a serving plate. Serve hot. Enjoy it with ketchup!!!
