Prawn Malai Curry (Chingri Maacher Malai Curry)


This is Bengali dish. It is usually served with hot steaming rice or with pulao. In this prawns are cooked in thick coconut milk.

Ingredients
Chingri Maach (Prawns) 200 gms
Coconut Milk 3/4 of can
Onion (small) 1, paste
Garlic Paste 1 tbsp
Ginger Paste 1 tbsp
Turmeric Powder (Haldi) 2 tsp
Red Chili Powder 1/2 tsp
Cloves 4
Green Cardamoms 5
Cinnamon 2 sticks
Bay leaves 2
Garam Masala Powder 1 tsp
Ghee 3 tbsp
Oil 1 tbsp
Salt to Taste
Sugar 2 tsp
Coconut Cream 1 tbsp

Method
1. Marinate the prawns in turmeric and salt for 10 minutes.
2. Heat 2 tbsp oil in a pan and fry the prawns for 2 minutes. Take it out and keep aside.

3. Then in pan add rest of the oil & ghee. Add cloves, cardamoms, cinnamon, bay leaves and garlic paste. Saute for few minutes.
4. Now add the onion paste and fry for 2-3 minutes. Then add ginger paste and saute it.

5. Add salt, sugar, turmeric powder, red chili powder. Fry till the masala leaving the oil.
6. Now add little water & bring it to boil. Then add fried prawns and coconut milk.
7. Simmer until the prawns are cooked for about 4 minutes (overcooking will toughen the prawns).

8. Turn off the flame and sprinkle garam masala powder.
9. Chingri Malai Curry is ready. Transfer to a serving dish and pour coconut cream at its top.

10. Serve with steamed rice or pulao...
