Paneer Pav Bhaji

Paneer Pav Bhaji


Ingredients
Cottage Cheese (Paneer) 1 cup, grated
Potato (big) 1, boiled & mashed
Green Chili 2
Cabbage 1/2 cup, chopped
Carrot 1 cup, boiled & mashed
Cauliflower 1/2 cup, boiled & mashed
Peas 1 cup, boiled
Capsicum, chopped
Tomato (medium) 2, pureed
Onion (medium) 1, chopped
Ginger-Garlic Paste 1-2 tsp
Chili Powder 1 tsp
Turmeric Powder (Haldi) 1 tsp
Pav Bhaji Masala 2-3 tbsp
Butter 3 tbsp
Salt to taste
Pav 12
Onion (small) 1, chopped (Garnishing)
Cottage Cheese 2-3 tbsp, grated (Garnishing)
Lemon Wedges (Garnishing)
Butter (Garnishing)

Method
1. In a frying pan add butter. When butter melts add chopped onion & green chilies.
2. Fry the onion till it becomes transparent.
3. Then add ginger-garlic paste and fry till the raw smell disappears
4. Now add tomato puree and saute for a while.
5. Add the chopped capsicum, cabbage, turmeric powder, chili powder, garam masala powder & pav bhaji masala. Fry for 2-3 minutes.
6. Add boiled vegetables and salt, mix it with masher. Now add little water & let it simmer for 6-7 minutes.

7. Now add the grated paneer, mix it and cook for couple of minutes.

8. When done garnish with coriander leaves, grated paneer in individual serving plates.
9. Serve the bhaji hot with chopped onion, lemon wedges, butter cube and buttered pavs.


Buttered Pavs
1. Slice the pavs.
2. On flat pan/ tawa heat some buter.
3. When butter melts add some pav bhaji masala. Keep the pavs on the tawa and let the butter absorb the pavs.
