Mutton Pulao

Mutton Pulao
For mutton lovers.... Very simple & quick recipe!!!


Ingredients
Mutton 500 gms (Cut into medium sized pieces)
Basmati Rice 2 cups
Onion 1 (sliced)
Cashew Nuts 1/4 cup
Raisins 10
Ginger-Garlic Paste 2 tbsp
Cloves 4-5
Green Cardamom 4
Cinnamon Stick 1 inch
Peppercorns 6
Dry Red Chili 2
Ghee 3 tbsp

Method
1. Wash the meat and cut into big pieces.
2. In cooker heat ghee. Add dry red chilies, cloves, cardamom, cinnamon & peppercorns. Saute for few seconds.

3. Add ginger-garlic paste saute for 1-2 mins. Then add onion sliced. Saute for 4-5 mins.

4. Then add the mutton pieces and salt. Stir fry till meat is opaque.

5. Now add 2 cups of water, close the lid and let it pressure cook for 3 whistles or cook till meat is tender. Turn off heat and cool.
9. Then remove the lid. Strain the meat and reserve the stock.
10. Wash and soak rice in enough water for 30 minutes.
11. Heat ghee in a pan and fry the cashew nuts.

12. Now add the rice and fry with cashew nuts for 3-4 minutes. Then add the raisins.

13. Pour the mutton stock into it. Cover & cook till rice is tender.

14. When rice is cooked add meat and mix it well.

15. Now transfer it into a serving dish. Enjoy it with raita....
