Anaras ka mitha (Pineapple Dessert)

Pineapple (Anaras) 1 medium, finely chopped
Khoya/Mava 1 1/2 cup, grated
Ghee 3 tbsp
Sugar 1/4 cup
Green Cardamom (elichi) Powder 1 tsp
Watermelon Seeds (Char Magaz/ Chironji) 2 tbsp
Almond 1 tbsp, finely sliced
Pistachio 1 tsp for garnishing
Method
1. Heat 1 tbsp ghee add watermelon seeds & almond. Saute till golden in color. Keep aside.
2. In another pan heat 2 tbsp ghee and add pineapple. Saute for 3-4 mins. or till the water absorbed.
3. Add sugar and stir till sugar dissolves. Add cardamom powder and cook for a while.
4. Now add watermelon seeds and almond. Add khoya and mix it well.
5. Cook till the khoya is heated through.
6. Remove from flame and garnish with sliced pistachio.
7. Serve hot or cold.
