Litti Recipe (Bihari Litti)

Litti Recipe


'Litti' is traditional recipe of Bihar & Jharkand. It consists of balls of wheat and stuffed with sattu, then filled with ghee via a hole. It is then bake or fried. It is traditionally eaten with chokha. It can be served at lunch or dinner. 

Ingredients

For dough

Wheat Flour (Atta) 2 cups
Cooking Soda / Baking Soda 1/2 tsp
Ghee 2 tbsp
Salt 3/4 tsp

For Stuffing (Pitthi)

Roasted Bengal gram flour (Sattu) 1 cup
Ginger 1 inch long piece
Garlic 2-3 cloves
Onion small 1/2
Green Chili 2
Fresh Coriander Leaves 2 tbsp
Lemon Juice 1/2 
Carom Seeds (Ajwain) 1 tsp
Onion Seeds / Manrella (Kalonji) 1 tsp
Pickle Masala (Anchar) 1 tbsp
Mustard Oil (Sarsoo Tel) 1 tsp
Salt to taste
Water 

Method
1. Preheat oven to 375 °C.
2. Take wheat flour add cooking soda, ghee & salt. Mix and with water knead a soft dough.

For Stuffing (Pitthi)
1. Now finely chop ginger, garlic, onion, green chili and coriander.
2. Take sattu add chopped ginger, garlic, onion, green chili, coriander, lemon juice, ajwain, kalonji, anchar, mustard oil & salt. mix all well. Sprinkle some water into it. Again mix it well.
3. Divide the dough into lemon sized balls.
4. Now stuff the filling with spoon and close it from all sides. Then once again roll into balls.
Make 8-10 balls like this. 
5. Put all the litties on a baking tray.
6. Bake them by turning sides or until they turn brown, usually it takes 30-40 mins.
7. Serve hot with chokha, sliced onions & green chutney.
